Denni has been a pizzaiolo for fifteen years. He trained in Naples, at the ovens of L'Antica Pizzeria da Michele, one of the most celebrated pizzerias in the world. His method is the traditional one: dough that rests for 48 hours before it goes into the oven, for a light, easy-to-digest pizza with a tall, soft crust. Every pizza that leaves our oven goes through his hands.
